This is the first episode of our experimental new segment, I Want to Know What You Know. The idea? We choose the host; he or she chooses the guest. From there, it’s up to the host to tease out the knowledge he or she is hungry for. Our goal is to get insights into the worlds of the most exciting, often invisible, people in the food business.
In this first episode, we asked Special Projects coordinator extraordinaire Liz Calderón to host. She chose chef Linda Colwell as her guest, and they talk about what it means to be undefinable, the impulse to say “yes,” engaging kids in cooking, cow’s tongues, eating dumplings in the middle of the night, and more. The conversation was recorded at KBOO Community Radio in Portland, OR.
